Flat Iron founder to co-launch first pub

Charlie Carroll has partnered with London publican Oisín Rogers to open a pub in Piccadilly Circus.

The founder of the Flat Iron restaurant brand Charlie Carroll has partnered with renowned London publican Oisín Rogers to open a new pub in Piccadilly Circus.

Set to launch in the autumn, The Devonshire will feature food centred around a wood-ember grill, a concept that the duo describe as "highly ambitious". 

While the grill will be the focus of the upstairs restaurant, downstairs will be a pub dedicated to honouring the building's history as a 1793 inn. 

"Osh and I have been talking about our dream pub for almost a decade; somewhere warm, welcoming and accessible to all, where the team really care about looking after you and about the quality of each and every bit of food and drink served," says Carroll (pictured above left). "I can’t wait to have a pint and a homemade bacon sarnie."

The Devonshire will be a professional full circle for Carroll, who launched his first Flat Iron in 2012 as a pop-up above a pub in East London. Today, the business now has 12 restaurants across London and is about to open its first outside the capital in Cambridge. 

More on the food

For the restaurant, Scottish beef will be dry-aged and butchered on site, ready to be served as dry-aged rib chops, fillets, and Guinness and beef skirt suet puddings. 

The grill will also feature creel-caught langoustines from Oban, hand-dived scallops from Devon and prime day boat fish. 

A three-course menu will be on offer at both lunch and dinner, featuring the likes of prawn and langoustine cocktail, steak and chips, and sticky toffee pudding.

Downstairs there will be homemade bar food from the in-house butchery and bakery. 

"I am delighted, excited and fortunate to be working with Charlie at full tilt on this," adds Rogers (pictured above right). "I can’t wait to be back behind the bar pulling pints again when we open in the autumn."

Rogers is a much-respected publican, having successfully steered a selection of Young's sites across London for the majority of his career. Having turned The Ship in Wandsworth into a flagship for the pubco, he had a brief stint at The Canonbury in Highbury before overseeing the consistently strong performance at Mayfair's Guinea Grill for a number of years.
